This cold taco dip is eleven gorgeous layers of flavor built in a trifle dish so everyone can see exactly what they’re
about to dig into. Cream cheese refried bean base, two sour cream layers, Rotel, taco seasoned sour cream, cheese,
mild green chilis, southwest corn, shredded lettuce, diced tomatoes, black olives and green onions. No cooking, no
oven, and it looks absolutely stunning.

WHAT YOU’LL NEED
– Cream cheese, refried beans, taco seasoning
– Sour cream (two layers)
– Rotel diced tomatoes, drained
– Mild green chilis, drained
– Canned southwest corn, drained
– Shredded Mexican cheese blend
– Shredded lettuce, diced tomatoes, black olives, green onions
– Tortilla chips, colored tortilla triangles, cucumber slices for serving

RECIPE — Cold Taco Dip (11 Layers)
Ingredients:
• 8 oz cream cheese, softened
• 16 oz can refried beans
• 1 packet taco seasoning, divided
• 16 oz sour cream, divided
• 1 can Rotel diced tomatoes, drained
• 4 oz can mild green chilis, drained
• 1 can southwest corn, drained
• 1½ cups shredded Mexican cheese blend, divided
• 1 cup shredded lettuce
• 1 cup diced tomatoes
• 1 can sliced black olives, drained
• 3 green onions, sliced
• Tortilla chips, colored tortilla triangles and cucumber slices for serving
Instructions:
1. Beat cream cheese until smooth. Add refried beans and half the taco seasoning. Mix until fully combined. Spread
evenly in bottom of trifle dish.
2. Spread half the sour cream evenly over the base as the first sour cream layer.
3. Spread drained Rotel evenly over the sour cream layer.
4. Mix remaining sour cream with remaining taco seasoning. Spread evenly as the second sour cream layer.
5. Sprinkle 1 cup shredded cheese over the taco sour cream layer.
6. Scatter drained green chilis evenly over the cheese.
7. Add drained southwest corn as its own layer.
8. Add shredded lettuce evenly over the corn.
9. Scatter diced tomatoes and drained black olives over the lettuce.
10. Top with remaining cheese and green onions. Refrigerate at least 1 hour.
11. Serve with tortilla chips, colored tortilla triangles and cucumber slices arranged around the dish.

Refried beans with bacon…hmmm cream cheese takes the Mexican out of it… but put an American spin on it. Like you say, Kristin, "whatever makes you happy" enjoy!! That's the bottom line…be happy 😊❤ 🙏🏻
Yummy! I may or may not add rice. But this recipe looks incredible.
I put black beans on bottom,then the refried beans, gives you a BASE to scoop out . No chips on top😊

Kristen, enjoy your Marco Island and Birthday Vacation. This layer salad is amazing. I never had it with the corn but I say yes, Perfect. I know in the past we used like fresh salsa where you had the Rotel. I like the idea of Rotel tomatoes. Can't wait to make this.

I love the ingredients but the "layering" is useless .. pretty, but not practical .. way too deep to dig into .. and it's enough for a really large crowd .. so, I would mix the refried beans and cream cheese, the sour cream and taco seasoning then everything else in individual bowls and serve with chips and/or tortillas .. serve with small plates and folks could eat like a dip or a refried bean taco with all the trimmings .. yum .. 😋
Such a great fish . But when I make a 7 layer dip I use ground beef beans, guacamole, sour cream, shredded, Monterey Jack cheese, more ground beef with sour cream and cheddar, cheese, and guacamole and then all chips on top delicious❤yummy
