Sweet plantains, or maduros, cook best when they are very ripe, with skins that are mostly black and feel slightly soft.
For pan fried maduros, slice the plantains about ½ inch thick on a diagonal. Heat enough oil to lightly coat the bottom of a skillet over medium heat. Cook for about 2 to 3 minutes per side, until deeply golden brown and caramelized. Transfer them to a paper towel lined plate and lightly salt while warm.
For air fried plantains, lightly coat the slices with oil and cook at 380°F to 390°F for 8 to 10 minutes, flipping halfway through.
For oven baked plantains, bake them at 420°F covered with foil for about 20 minutes. Remove the foil and continue baking for another 10 to 15 minutes, until soft and caramelized.
Peel the plantain and slice it diagonally, about ½ inch thick.
Heat a thin layer of oil in a skillet over medium heat.
Add the plantain slices in one layer. Do not overcrowd the pan.
Cook for 3 to 4 minutes on the first side, until golden brown.
Flip and cook for another 3 to 4 minutes.
Lower the heat slightly if the outside is browning before the middle softens.
Remove once both sides are golden and the center is tender.
Drain on a paper towel and add a small pinch of salt while warm.
