  2. Graham Kerr has a lower fat recipe for oxtails braised in red wine. It's a fine dish. The cooking liquid is defatted with a strainer but still is full of gelatin and collagen. It tastes wonderful, and rich.

    That takes a few hours in the oven. My point being that braising meat is magic.

  3. The Cocado Chicken doesn't have the greatest ratings on their website. 3.1 out of 5 based on 265 review ratings. It also has salt added to it-before they brined it.

  5. Rather have a format where the inexpensive one is the "good" option, like a episode where spending ridiculous amount of money is not worth it

  6. It would've been interesting to show how much the 10-14 hours of cooking costs you in energy. Definitely not 17£ like in the gravy's case , but it would be fun to know.

  7. £80 for a chicken is expensive but if you got a free range RSPCA Organic chicken and treated like you did with the time one, i think you would get similar actions. It was interesting to watch Barry as i think he know after the first round he wasnt able to win because lets be honest as chef has better taste than a normal as they cook for a living, so i think Barry copied and listened to James more.

  9. one of the most interesting videos of late, i really liked how informative it was, while still being fun and entertaining, the biggest takeaway for me was the chicken, brine and dry, plus baste, none of it difficult, and despite technically being the long option, not time consuming at all, very hands off to both brine and dry, and basting is something i should be doing anyway.

  11. Is it just me or on the graphic for the upcoming live show Mike looks annoyed at something (probably Barry being extra as he does) and Barry seems constipated.

    Ben and Jamie are the only two that seem like themselves.

    There is absolutely no way I am the only that thinks this.

  12. Please, please, please fix what ever you have done to your audio. Your vids are one of the only big ish channels that the sound quality is all over the place like a low end solo channel with a bad pitch recording mic. It's actually really bad for people who have auditory problems like myself where your mic recordings are splitting my brain and sets off a migraine every damn time and it doesn't matter what device it plays on, phone, pc, TV.

    If you have upgraded your mics they obviously havn't been properly sound tested and adjusted against what you used previously. Please get this fixed for us who are suffering with chronic illness/disorders that just want to watch your vids without setting off flare ups.

  13. I think the real takeaway is that you are generally going to get better results when you work for perfection, you really can't just buy it. And often, like the brined chicken (a technique I've come to adore), it's less a matter of the amount of work than the patience withing the crafting. The old rule, "fast, cheap, good; pick two" still applies.
