Indo-Chinese Chow Mein | The Ultimate Street Food Fusion

Indo-Chinese Chow Mein

Ingredients

4 nests fine egg noodles, 250g
6 tbsp vegetable oil or any neutral oil
2 medium onions, cut into chunky petals
8 fat cloves garlic, finely chopped
1 large green pepper, cut into chunks
2 carrots, cut into thick batons
2 pak choi, roughly chopped
1 bunch spring onions, sliced (use half while cooking and half for garnish)

Sauce

5 tbsp Light Soy Sauce
4 tbsp Cholula Original Hot Sauce
3 tbsp Rice vinegar
1 tbsp Ketchup
½ tsp MSG

Sesame seeds, for garnish

Method

Prepare all the vegetables. In a jar or bowl, mix together the light soy sauce, Cholula, ketchup and rice vinegar.

Heat the vegetable oil in a wok or large rounded pot over high heat. Add the onions and cook for 2 minutes, then stir in the garlic and cook for another minute.

Add the green pepper, carrots, pak choi, green chillies and half of the spring onions. Stir-fry over high heat for 5 minutes. Add Msg.

Pour in the prepared sauce and cook for another 5 minutes. Meanwhile, cook the egg noodles according to the packet instructions. Mine took 4–5 minutes in boiling water.

Drain the noodles, rinse them under cold running water, then drizzle with a little oil and toss well to prevent them from sticking together.

Add the cooked noodles to the wok and toss everything together until the noodles are evenly coated in the sauce.

Serve, garnished with the remaining spring onions and a generous sprinkle of sesame seeds.

Chowmein tastes best when rested, don’t eat when its too hot.

  11. I use MSG all the time – it's rated as healthier than salt by the WHO. Parmesan cheese is literally 3% MSG. It's so great to see someone with a rational attitude towards it.

  12. i admire your videos but for a desi chowmein it has long flat cut vegetables (green pepers , onions) not diced vegetables cut ..apart from that everything was perfect

  14. This is maybe a controversial opinion and I don't want to detract from your recipe but imo a lot of indo-chinese food is overrated and actually lacks balance. The base sauce is often too basic (student pantry-type stuff) and ends up being too sour/sweet/spice. But regardless of that, I don't think it's a fusion of food cultures that results in synergism (i.e. better than the sum of its chinese and indian parts). Honestly I just think chinese-only recipes do a better job in terms of umami/savouriness and balance for this type of food.

    Sorry this comes across as hater energy and I'm sure there are many many people who disagree lol

  15. Looks delicious. I don't think of Cholula as being all that hot. Seems like Kashmiri chili powder or Indian chilies would be hotter. I love this channel.

  19. Your not wrong! Very similar to Nepali style chowmin (spelt the Nepali way 😂).
    I never knew it was a thing until I started learning about Asian food, my HK Chinese friends didn’t know it was popular in Nepal or India either .
    I like doing it with plenty of sauce and deep fried chicken that has been marinated in corn starch, white pepper, mild curry powder and ginger garlic paste 😋😋🙏🇳🇵🇮🇳🇬🇧
