Aloo Tikka Masala

Serves: 4-6
Recipe in English

Ingredients:
-Cooking oil ¾ Cup
-Aloo (Potatoes) 5 medium (boiled 80%)
-Pyaz (Onion) finely chopped 2 medium
-Tamatar (Tomatoes) pureed 2 medium
-Haldi powder (Turmeric powder) ½ tsp
-Zeera powder (Cumin powder) ½ tsp
-Iodized Himalayan pink salt ¼ tsp or to taste
-Water ½ Cup
-Dahi (Yogurt) whisked ¾ Cup
-Adrak lehsan paste (Ginger garlic powder) ½ tbs
-Baisan (Gram flour) 2-3 tbs
-Haldi powder (Turmeric powder) ½ tsp
-Kashmiri lal mirch (Kashmiri red chilli) powder ½ tbs
-Iodized Himalayan pink salt ½ tsp or to taste
-Zeera powder (Cumin powder) 1 tsp
-Chaat masala ½ tsp
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Garam masala powder ½ tsp
-Kasuri methi (Dried fenugreek leaves) 1 tsp
-Pyaz (Onion) diced ½ Cup
-Tamatar (Tomato) diced & deseeded ½ Cup
-Shimla mirch (Capsicum) diced ½ Cup
-Kasuri methi (Dried fenugreek leaves)
-Hara dhania (Fresh coriander)
-Lemon juice 1 tsp
-Koyla (Charcoal)
-Cooking Oil

Direction:
-In a wok, add cooking oil & heat it.
-Add boiled potatoes, fry on medium flame until light golden.
-Take out fried potatoes & set aside.
-Take out excess cooking oil (¼ cup).
-In the same wok, add onion, fry on medium flame until light golden
-Add tomato puree, turmeric powder, cumin powder, pink salt & mix well.
-Cook on medium flame for 1-2 minutes, add water & mix well.
-Cover & cook on low flame for 5-6 minutes.
-In a bowl, add yogurt, ginger garlic powder, gram flour, turmeric powder, kashmiri red chilli powder, pink salt, cumin powder, chaat masala, red chilli powder, garam masala powder, dried fenugreek leaves & whisk well.
-Add fried potato, capsicum, onion, tomato & mix well.
-Remove the cover, add potato mixture & mix well.
-Add dried fenugreek leaves, fresh coriander, lemon juice, & mix well.
-Cover & cook on low flame for 5-6 minutes.
-Remove the cover, mix well, give a coal smoke
-Transfer to a serving dish, garnish with fresh coriander & serve with naan!
