What makes the perfect empanada? For this episode of Food Secrets, we travel to Galicia in northwestern Spain, where baker Antía Fernández García reveals the secrets behind a recipe that has been passed down through five generations.

From traditional sourdough and a juicy filling made with meat from the rare Celtic pig to the pastry’s historic roots along the Camino de Santiago, we uncover what makes this iconic dish so special.

Along the way, we learn why the empanada was already celebrated in the Middle Ages, how it found its way to the Americas, and why there are now thousands of variations enjoyed around the world.
