I Dry-Aged Steaks in 4 INSANE Environments!

I built four extreme dry-aging environments around untouched steaks using Binchotan charcoal, Wagyu fat, salami mold, Greek yogurt, koji, honey, and blue cheese. Can changing only the air create premium dry-aged beef flavor? A wild steak experiment with food science, cooking, and grilling.

  1. The blue cheese one has me the most interested, i love the flavor of blue cheese, i put it on and in a lot of the dishes that i cook. I even use it in place of salt in many of the soups that i make, it works quite well.

  2. Only a pathetic poor man would reuse all of them containers XD. Thats a straight up food poisoning case waiting to happen haha.

  3. Day 1 of asking Guga to make a dry-aged cheesecake stake with any cheesecake from the cheesecake factory (preferably white chocolate raspberry truffle cheesecake or triple berry bliss cheesecake but it's up to you), preferably longer than a week(or whatever you think feels right) and then smoked and/or grill it for another I Tried Your Craziest Steak Experiments video

  4. Do it in smoke, let’s see what happens at cold temperatures with little movement but long time

Also in atmosphere with no oxygen and one with extra

Also dry age in vitamin c orange powder or tang

  5. Moose piss? Moose piss. I mean I want to see Max the Meat Guy collect it, but urine of various species has been used on tissue for therapy for thousands of years, probably.

  6. @gugafoods have you tried freeze dried steak rehydrated by vacuum chamber filled with beef stock or wagu tallow that’s warmed up? Or bacon fat?

@gugafoods or instead of a freeze dried steak use a smoked dried out steak (or just an aged steak) and using sparkling flavored water in a vacuum chamber. Or lol even duck fat!

  7. Guga, on the charcoal one, you made holes to release the moisture. You did quite the opposite, those holes would allow moisture in. Charcoal TRAPS moisture, so those little holes would allow more moisture to flow in once the charcoal trapped all the inside moisture.

  8. Hey guga, you should do a experiment with all the same steak,1pice,,

Then then blind taste test, only with the smell of some experment

  9. This is the most interesting video/experiment you've done and that's really saying something. This changes how I think. Thank you!

  10. I have been a huge fan for three years now. I am a chef working in Sarasota, You have been such a great help and inspiration for me. I got to try one of your inspired experiments for myself today. It hit like heaven. It was very important to because of Cancer I will be loosing 80% of my tongue and may never taste again. I just wanted to say thank you for all the ideas and tips over the years you helped me out in my job and my at home gill game. the steak I had was heaven in my mouth. All done the same way you do it or as close as I could get. Thank you Guga you are truly a grill titan among men. Now here is hoping in a year I will be back to eating steaks and no longer on a feed tube.

  11. the salami, koji and blue cheese all have as the relevant ingredient a mold, which should release spores and thus quickly transfer and grow an the steak too. For the salami just using the skin would probably achieve the same result. the charcoal however should be what is left over after all volatile compounds have left the wood, so that should not really add flavor by itself, rather the interaction with the wagyu fat and any volatile compounds from the steak might get broken down. I guess an empty container or just the wagyu fat would achieve the same result.

  12. Blue cheese has a similar effect om me like koriander has on a lot of people. While koriander taste like soap for the people affected by it, blue cheese taste like vomit for me. Any food even remotely touched by blue cheese is ruined for me.

  13. When will we stop pretending that they don't all know what all of them are beforehand? lool

  14. If you ever come to Portland Oregon please try the Country Kitchen Steak House. I’m curious to see what you rate this place at.

  15. Maybe age the bleu cheese piece less time? or a bit less cheese on the walls of the chamber?
And maybe the bleu cheese might be good for burger, perhaps with some bacon or cajun rub?
They had nothing like this in PoΓ§os das Caldas last week…

  16. I have no clue if its good but I have heard that toasted milkpowder is called the MSG for deserts. Maybe its works on steak?!

  17. YES EXACTLY , THAT WHY " BBQ " THE BEST BECAUSE SITS IN THE SMOKE MADE OUT OF ITS OWN REDENDERED JUICES THAT DROP DOWN ON THE HOT COAL AND BURN AS SMOKE AND INFUSE INTO THE MEATS ❀
    WITH ' ZERO-WASTE ' πŸ‘

  18. Like mold πŸ˜‚πŸ˜‚πŸ˜‚πŸ˜‚πŸ˜‚πŸ˜‚πŸ˜‚πŸ˜‚β€β€β€β€β€β€β€β€β€β€
