For this week’s video, we’re making homemade steak tacos with soft flour tortillas made completely from scratch, juicy seasoned steak, fresh guacamole, crisp lettuce, sweet corn, and homemade salsa.

The steak is seared until beautifully browned and tender, while the homemade tortillas are cooked until soft with lightly toasted edges. Fresh guacamole and salsa bring everything together, with sweet corn and crisp lettuce adding freshness and texture.

This is the kind of meal that’s perfect for a relaxed dinner at home — fresh, flavourful, and fun to put together, with everything served separately so everyone can build their tacos just the way they like them.

Homemade Steak Tacos with Guacamole, Sweet Corn & Fresh Salsa

Ingredients
Homemade Tortillas
2½ cups all-purpose flour
1 tsp salt
1 tsp baking powder
¼ cup vegetable oil
¾ cup warm water

Steak
500g steak
1 tbsp olive oil
1 tsp garlic powder
1 tsp smoked paprika
1 tsp ground cumin
Salt & black pepper, to taste
1 tbsp butter
2 garlic cloves, crushed

Guacamole
2 ripe avocados
½ small red onion, finely chopped
1 small tomato, finely chopped
Juice of ½ lime
Salt & black pepper, to taste

Fresh Salsa
2 tomatoes, diced
½ small red onion, finely chopped
Handful fresh coriander, chopped
Juice of ½ lime
Salt & black pepper, to taste

To Assemble
Shredded lettuce
Sweet corn
Guacamole
Fresh salsa
Sliced steak
Homemade tortillas

Method
1. Make the Homemade Tortillas
In a large bowl, combine the flour, salt, and baking powder.
Add the vegetable oil and gradually pour in the warm water, mixing until a soft dough forms.
Knead the dough for 3–5 minutes until smooth, then divide into 8–10 equal balls. Cover and allow to rest for about 20 minutes.
Roll each ball out into a thin tortilla.
Heat a dry pan over medium-high heat and cook each tortilla for 30–60 seconds per side, or until lightly golden with a few toasted spots.
Stack the cooked tortillas and cover with a clean kitchen towel to keep them soft and warm.

2. Cook the Steak
Drizzle the steak with olive oil and season with garlic powder, smoked paprika, cumin, salt, and black pepper.
Heat a pan over high heat and sear the steak on both sides until beautifully browned and cooked to your preferred doneness.
Add the butter and crushed garlic towards the end of cooking and baste the steak with the garlic butter.
Remove from the pan and allow to rest for 5–10 minutes before slicing into strips.

3. Prepare the Guacamole
Place the avocados in a bowl and mash until creamy but still slightly chunky.
Add the red onion, tomato, and lime juice.
Season with salt and black pepper and mix gently until combined.

4. Make the Fresh Salsa
Combine the diced tomatoes, red onion, and fresh coriander in a bowl.
Add the lime juice and season with salt and black pepper.
Mix everything together and set aside until ready to serve.

5. Prepare the Sweet Corn & Lettuce
Drain the sweet corn if using canned corn and set aside.
Wash and finely shred the lettuce, then keep chilled until you’re ready to build the tacos.

6. Build the Tacos
Place a warm homemade tortilla on a plate.
Add the shredded lettuce, sliced steak, guacamole, sweet corn, and fresh salsa.
Fold the tortilla around the filling and serve while the steak and tortillas are still warm.
