Adrianna Adarme joins us in the kitchen studio for the first time (!) to make her lomo saltado with oven fries and aji verde. The soy sauce-enhanced stir-fry, with succulent beef strips and peppers, is a beloved Peruvian meal with Cantonese roots.
Adrianna’s Peruvian grandfather taught her how to make the dish, which was also the official Sunday meal of her household growing up. “These are the flavors of my childhood,” she said. “It was loud, soccer was playing in the background, lots of joy, lots of happiness and just great family time.”

A hotel I frequent used to have lomo saltado at the resto. You could eat it with two cups of rice and it was very filling.
I’m Peruvian but my doctor says my potassium level is higher than normal. So I have to cut back on potatoes and tomatoes. Lomo was my favorite dish.
my first meal when i arrived in aguas calientes in peru in 2015 was lomo saltado! overlooking the river, getting acclimated with the altitude. looooooove this dish. truly perfect.
!!!!! my favorite dish of ALL TIME. small Peruvian chain in Baltimore called chicken rico was where I used to get it. no Peruvian restaurants where I am now 🙁
