Beef Patties with Onions and Peppers

This is a firm family favourite. It is easy to make and delicious, and it can be varied by adding other vegetables, such as sliced peppers, broccoli or mushrooms. These patties are very versatile and can be served in a variety of ways – with chunky home-made chips (fries), with crusty bread, or with rice and a ready-made tomato sauce.

Serves four

Ingredients:

500g/1 1/4b lean minced (ground) beef
4 onions, 1 finely chopped and 3 sliced
30ml/2 tbsp garlic-flavoured olive oil or olive oil
2-3 green (bell) peppers, seeded and sliced lengthways into strips

Method:

1. Place the minced beef, chopped onion and 15ml/1 tbsp garlic-flavoured oil in a bowl and mix well. Season well and form into four large or eight small patties.

2. Heat the remaining oil in a large non-stick pan, then add the patties and cook on both sides until browned. Sprinkle over 15ml/1 tbsp water and add a little seasoning.

3. Cover the patties with the sliced onions and peppers. Sprinkle in another 15ml/1 tbsp water and a litter seasoning, then cover the pan. Reduce the heat to very low and braise for 20-30 minutes.

4. When the onions are turning golden brown, remove the pan from the heat. Serve the patties with onions and peppers.
