PREPARATION
1. Preheat the oven to 350ËšF (180ËšC).
2. In a pan over medium heat, combine the ingredients for the hot honey. Allow the mixture to simmer gently for 3-4 minutes without boiling, then remove from heat.
3. In a large cast-iron skillet, melt the butter. Add the apples, ½ cup of hot honey, brown sugar, vanilla extract, lemon juice, cinnamon, and bourbon. Cook over medium-high heat until the mixture reaches a light boil. Stir in the cornstarch and remove from heat. Remove the apples from the pan and set aside.
4. In a large bowl, whisk together the flour, sugar, baking powder, salt, and nutmeg. Add the milk and mix until smooth.
5. Pour the melted butter into the same large cast-iron skillet used for the apples. Spread the batter over the melted butter. Spoon the apple filling evenly on top of the batter.
6. Bake uncovered for 40-45 minutes. Once done, let the cobbler rest for 5 minutes.
7. Top with scoops of ice cream and drizzle with even more hot honey (as much as you can handle)! Garnish with a little more red pepper flakes, if desired.
