I recently spent some time in Israel and the feeling is that Israeli food has translated all our communal bubbies from everywhere into finer dining, whether you see it through a place called Malka or Mutra or a place called LIBA, which is in this excellent neighborhood called Williamsburg, which I only knew for Hasidic wedding halls for most of my life.
We are a culture that happens to keep kosher and this is a restaurant that happens to help define that.
