MUSHROOM PÂTÉ
100g fresh Shiitake mushrooms
Eggplant trimmings
1 tablespoon unsalted butter
Salt & pepper to taste

EGGPLANT AND MUSHROOM PIE
Puff pastry
Dried Nori seaweed sheets
Mushroom pâté
Sous vide eggplants
Egg wash (1 egg yolk + 1 tablespoon heavy cream)

ROASTED EGGPLANT TARTARE
1 eggplant
1 garlic clove
Olive oil, salt & pepper
1 cornichon
1 teaspoon capers
1 small shallot
1 tablespoon sour cream
1 tablespoon miso
Borage flowers

MUSHROOM JUS
50g dried Shiitake mushrooms
300ml luke warm water
300ml vegetable stock
Salt, sugar and vinegar to taste
Cornstarch slurry
