Andy Baraghani shows us how to make his crispy chicken thighs with melty leeks and peas. It’s the kind of dish you make when all the pretty greens finally show up at the market and you want something light but still deeply satisfying. It all happens in one skillet, which means the vegetables pick up the savory bits left behind by the chicken.

  1. without the herbs this dish is lovely and green but cyclosporiasis-safe. Will be making this week.

  2. This looks great, but I would probably finish the chicken thighs in a low oven – Around 300°

  3. CRISPY JUICY chicken thighs with JUICY GREENY SNAPPY CRUNCHY greens holy shit can you just give it a normal name

  4. how nice I just wish there was some potatoes along with the chicken fat lol I'm a carb lover and I'd probably only put in 1/4 of the leek as it has a different flavor to my senses, I love green fresh or young onions with the giant green stalks as the main friend to most food ones but including other of the onion family would be nice too. Oh btw the I want that pan too I hope Andy gets one for all the work he put in.

  5. Those thighs look sexy… and the chicken does too!

I need to try using more of the top of the leek I usually don't use it so far up and save that part for stock.

  6. Andy Baraghani… now that’s a name I haven’t heard for a long time. Good to see you, Andy!
