Garlic Bread Grilled Cheese

@alexawhatsfordinner is combining some of her favorite comfort foods in honor of #MentalHealthAwarenessMonth–garlic confit + grilled cheese ?This twist on garlic bread grilled cheese features 30 cloves of garlic confit, several cloves of fresh garlic, PLUS three types of cheese. ??Recipe below!

Ingredients (for 1 sandwich)
-30 cloves garlic, peeled and ends removed
-1 cup extra-virgin olive oil
-1 tsp kosher salt
-3 sprigs fresh thyme
-2 slices sourdough bread
-2 slices American cheese
-½ cup freshly grated sharp cheddar cheese
-4 ounces whole milk mozzarella, thinly sliced
-3 Tbsp unsalted butter, softened
-4 garlic cloves, minced

Preparation
-Preheat the oven to 250°F (120°C).
-Add the garlic cloves to a large ramekin or oven-safe bowl, then completely cover with the olive oil. Sprinkle with the salt and add the thyme sprigs. Cover with a lid or aluminum foil, then bake for about 2 hours, until the garlic cloves are golden brown and meltingly tender.
-Divide the confit garlic cloves between the slices of sourdough bread and mash into a paste, spreading evenly. On one side of the bread, layer the American cheese, sharp cheddar, and mozzarella. Close the sandwich with the other piece of bread, garlic-side down.
-In a small bowl, stir together the butter and minced garlic until evenly combined. Spread half of the garlic butter on one side of the sandwich.
-Heat a large cast iron skillet over medium heat. Place the sandwich in the pan, garlic butter-side down. Place a sandwich press or smaller pan on top to press the sandwich down. Cook for 5-7 minutes, until the bottom is deep golden brown, being careful to not let it burn. Spread the remaining butter mixture on the top of the sandwich, then flip. Press down again and cook for 3-5 more minutes, until the cheese is fully melted. Serve immediately.
