Thousands of chefs work for free in elite restaurants
Thousands of chefs work for free in the world’s most elite kitchens.
It’s called staging — and it helped build legendary kitchens like Noma.
But today the system is facing serious criticism.

Apprenticeships like this used to work because it was usually only one apprentice at a time and they were given room and board. This can’t work today unless the apprentice is already loaded
Chefs call it staging. Critics call it unpaid labor. What do you think?
My gosh, it would be a privilege to be in that position and learn not only how to cook but how to work with pros..
>but today the intern slavery is facing criticism
little late to the party
So slavery lol
I think it would depend on the circumstances. NOMA abused it, but if you’re taking someone who has little to no culinary background but they have the passion, and you actually teach them instead of just making them clean and do the most menial jobs, it’s a fair trade.
Its called slave labour
Stage is the what internships are called in french
The only issue with apprenticeships like this. It favors rich kids. Poor kids don't have the privilege of working for free.
Would you work for free just to learn at a place like this?
