I’ve Been Cooking for These Monks for 20 Years
I’ve been coming to this Buddhist monastery for 20 years. This time I showed up with a mushroom I grew myself, and made dinner for the monks.

RECIPE
Chocolate Oyster Mushroom
• 1 large whole chocolate oyster mushroom cluster, substrate trimmed
• Neutral oil (canola, sunflower, vegetable, or avocado)
• Flake salt
• Heat a large cast iron on medium-high. Add mushroom stem-side down. Press with a second cast iron to expel water. Flip, press again on petal side — repeat as needed. Remove from heat and coat both sides with black pepper garlic mayo (below). Finish in oven at 375F for 15-25 minutes. Rest, then slice before serving.
Black Pepper Garlic Mayo
• 5 cloves garlic, toasted in skins, peeled and sliced
• 2 tablespoons whole black peppercorns
• Pinch of flake salt
• Plant-based mayo, enough to coat both sides of mushroom
• Smash peppercorns in a mortar and pestle. Add garlic and salt and smash together until paste-like. Mix in mayo.
Mustard Potatoes
• 8 potatoes, quartered
• 1/4 cup Dijon mustard
• 1/4 cup neutral oil
• 1 tablespoon onion granules
• Mix mustard and oil together, toss with potatoes to coat. Sear in cast iron, finish in oven at 375F for 15-20 minutes.
Roasted Onions
• Several onions, cut into wedges with root end intact
• Neutral oil and flake salt
• Toss lightly with oil and salt. Sear in hot pan, add a splash of water, then roast in oven until tender. Combine with potatoes to keep warm.

I have not lived in Vermont since 2004 (Irasburg) and i get blessed with this man whom i have never seen who also lives there? Plus he makes amazing food? Video was amazing!
I was right along with you until you put that mustard all over those potatoes.
I used to like to clean my dishes as i cook also but now I live without running water and have to carry it so that's not as easy for me.
This is my first time watching Derek. Very practical approach to cooking good basic food. I love good cast iron, good knives and cool weather. (I’ve already started a pot of beans on the stove.)
Could someone explain the ventilation fan that was used for the grow tent? I’d love to grow mushrooms in my sunroom (in a grow tent) without the risk of mushroom
spores in my lungs.

I love temperature in the early to mid 70’s. However, I live in Florida and the summers are brutal. We have approximately two months of great temperatures per year. I’ve lived in Florida for 60 years so it’s my home. But if I could find my happy 70 degree place, I would consider a move at age 87. 😅❤😅

I’m a next to the fireplace,cozy with a book a blanket and a hot cup cocoa person.
The cold is great for moving around,walking and playing with my dog.
Unfortunately I’m in A hot humid climate for awhile……
but my mountains are calling me daily❤

You refer to it as one mushroom? It's looks to me like many mushrooms.
You have recently helped me ‘convince myself’ 😉 to finally go back to this diet after perhaps 30 years since I walked away.
I am interested in purchasing the North Spore definitely. I use to make broths from mushrooms in the late 80’s ( while in the mushroom Capitol of the Country) but where I am at now there are very few options around for variety.
You make a great positive difference in the World.
