Dutch Baby with Peaches
INGREDIENTS
• eggs — 3
• milk — 180 ml
• flour — 90 g
• sugar — 15 g
• salt — a pinch
• butter — 30 g
• peaches — 4
• Greek yogurt — 200 g
• honey — 2 tbsp
• vanilla extract — 1 tsp
METHOD
1. Preheat the oven to 220°C.
2. Place a 21 cm baking dish or oven-safe skillet in the oven to heat up.
3. Combine the eggs, milk, flour, sugar, and salt.
4. Blend until smooth.
5. Carefully remove the hot dish from the oven.
6. Add the butter.
7. Once the butter has melted, immediately pour in the batter.
8. Return the dish to the oven.
9. Bake for 18–20 minutes.
10. Do not open the oven while it bakes.
11. Cut the peaches into wedges.
12. Heat a small pan.
13. Add 10 g of butter.
14. Add the peaches.
15. Add 1 tbsp of honey.
16. Cook for 2–3 minutes, until lightly caramelized.
17. Mix the Greek yogurt with the vanilla extract and the remaining honey.
18. Remove the Dutch Baby from the oven.
19. Spoon the yogurt cream into the center of the pancake.
20. Top with the caramelized peaches.
21. Serve immediately.
