Golden Crispy Papads From Mussaenda 🌿 & Milky Mango Pudding 🥭

The level-cut tea estate above was filled with clusters of mussaenda shrubs, their white blossoms spreading across the landscape. Their leaves, swaying to the drumbeat of the wind, resembled the flowing white costume of an Up-country Kandyan dancer. The Poson breeze was truly mischievous. The tender tea leaves I had carefully gathered in my basket slipped from my hands and were carried away by the wind, as if leaving little markers along the path that would guide me back home.
Because of the rain that had continued throughout the past week, I was unable to visit my vegetable garden. The entire bed of Veraniya chilies had ripened, and most of the fruits had already fallen to the ground. I picked whatever chilies could still be salvaged and made fritters by coating them, together with mussaenda blossoms, in a batter and deep-frying them.
For lunch, I had prepared yellow rice, coconut sambol, salad, fried dried fish, and a cashew curry. A few crispy mussaenda papadums, lightly fried with a touch of cumin, completed the meal beautifully, filling every empty space on the plate.
Although the mango season was gradually coming to an end, a few fruits still lingered on the trees. The fragrance of the ripe mangoes that had fallen to the ground spoke eloquently of their rich sweetness.
I combined fresh milk, condensed milk, cardamom, and cornflour, then cooked the mixture over the stove until it thickened. It was then spread thinly onto a flat plate to prepare mussaenda leaves. To the remaining mixture, I added finely grated ripe mango and roasted, crushed cashew nuts, stirring continuously before pouring it into small porcelain bowls to cool and set.
Once the “leaves” were cut into shape, I coated them lightly with desiccated coconut and placed them on top of the pudding. They looked just like real mussaenda leaves. The pudding was so delicious that even Aunt Menike could not decide what flavour it was supposed to be.
