A nationally recognized Savannah restaurant team will help shape the dining experience at the new Signia Hilton Savannah when the hotel opens in 2028.
Hilton announced Monday it is partnering with Grey Spaces, the Savannah-based hospitality company founded by James Beard Award-winning Chef Mashama Bailey and restaurateur Johno Morisano.
Grey Spaces will oversee the hotel’s food and beverage program, including developing restaurant concepts, menus, wine lists and guest experiences.
Bailey and Morisano are best known as the founders of The Grey, the acclaimed Savannah restaurant that opened in a restored 1938 Greyhound bus terminal in 2014. Their company also operates L’Arrêt by The Grey in Paris and focuses on Southern-inspired hospitality and cuisine.
New headquarters hotel planned for convention center
The 444-room Signia Hilton Savannah will serve as the headquarters hotel for the Savannah Convention Center when it opens in 2028.
The waterfront hotel will include more than 34,000 square feet of meeting space, five food and beverage venues, an outdoor pool, Club Signia and direct access to the convention center. It is owned by the Savannah-Georgia Convention Center Authority and will be managed by Hilton.
Focus on local flavor
Chef Mashama Bailey said the goal is to create a dining destination that reflects Savannah and the Lowcountry while welcoming both visitors and local residents.
Johno Morisano said Grey Spaces’ philosophy centers on creating places where people naturally gather and strangers become friends.
