Saturday Dinner – Fire-Braised Short Rib with iDombolo #cooking #foodie #beef #dumpling
For this week’s video, we’re making a hearty South African comfort plate featuring fire-braised short ribs, soft and fluffy idombolo, creamy spinach, and sweet roasted pumpkin. The short ribs are slowly cooked in a cast-iron fire pot over an open fire until tender and rich, while the idombolo soaks up all those delicious juices.
This is a proper slow-cooked meal made for gathering around the table — rich, comforting, and full of flavour.
Fire-Braised Short Ribs with Idombolo, Creamy Spinach & Pumpkin
Ingredients
Fire-Braised Short Ribs
1.5–2kg beef short ribs
2 tbsp oil
1 large onion, chopped
3 cloves garlic, minced
2 tbsp tomato paste
1 tsp paprika
1 tsp mixed herbs
1 tsp garlic powder
Salt & black pepper, to taste
2 cups beef stock
1 cup water, as needed
2 sprigs fresh rosemary
2 sprigs fresh thyme
Idombolo
3 cups cake flour
2 tsp baking powder
½ tsp salt
1 tbsp sugar
2 tbsp butter, melted
1–1¼ cups warm water
Fresh parsley, chopped (optional)
Creamy Spinach
500g fresh spinach, chopped
1 tbsp butter
1 small onion, finely chopped
2 cloves garlic, minced
½ cup cream
½ cup cream cheese
Salt & black pepper, to taste
Pumpkin
1 small pumpkin or 500–700g pumpkin, peeled and cut into chunks
2 tbsp butter
1 tbsp brown sugar
½ tsp cinnamon
Salt, to taste
Method
1. Prepare the Fire
Build a steady fire and allow it to develop a good bed of hot coals.
Place a heavy cast-iron fire pot over the heat and allow it to get hot before cooking.
2. Braise the Short Ribs
Season the short ribs generously with salt, black pepper, paprika, garlic powder, and mixed herbs.
Add the oil to the hot fire pot and brown the ribs well on all sides. Remove and set aside.
Add the onion to the same pot and cook until softened. Add the garlic and tomato paste and cook for another minute.
Return the short ribs to the pot and add the beef stock, water, rosemary, and thyme.
Cover with the lid and allow the ribs to braise slowly over the fire for approximately 2½–3½ hours, adjusting the heat and adding a little water or stock if necessary.
Cook until the meat is very tender and easily pulls away from the bone.
3. Make the Idombolo
In a bowl, combine the flour, baking powder, salt, and sugar.
Add the melted butter and gradually mix in the warm water until a soft dough forms.
Knead lightly until combined, then divide into small portions and shape into balls.
Once the short ribs are nearly tender, carefully place the idombolo portions into the pot above or around the braising liquid, depending on the size of your pot.
Cover tightly and steam for approximately 20–25 minutes, or until the dumplings are fluffy and cooked through.
4. Prepare the Creamy Spinach
Heat the butter in a pan over medium heat.
Add the onion and cook until softened, then add the garlic.
Add the chopped spinach and cook until wilted.
Stir in the cream and cream cheese and allow it to simmer gently until creamy.
Season with salt and black pepper.
5. Cook the Pumpkin
Melt the butter in a pan over medium heat.
Add the pumpkin chunks and season with salt, brown sugar, and cinnamon.
Cook until the pumpkin is tender and lightly caramelised, turning occasionally.
6. Assemble the Plate
Place a generous portion of idombolo onto the plate.
Add the fire-braised short ribs and spoon some of the rich braising gravy over the meat and dumpling.
Serve with creamy spinach and caramelised pumpkin on the side.
