The Village restaurant unveils a new dining concept with expanded menus and the return of Executive Chef Rene Deleon
A familiar Dallas restaurant is getting a fresh start and this time, it’s making room for everything from morning coffee to late-night cocktails. Anise, located inside The Drey Hotel at The Village, has reimagined its dining experience, shifting from its former Mediterranean-inspired food and wine bar concept to an all-day neighborhood restaurant serving breakfast, lunch, weekend brunch and evening bites.
While Anise is moving beyond its original Mediterranean-inspired concept, the cuisine continues to have a presence in Dallas. Restaurants such as Zon Zon are among the city’s Mediterranean dining options, offering a different experience for diners drawn to those flavors.
The transformation comes under the direction of The Village Culinary Director Eduardo Osorio and Executive Chef Rene Deleon, who returns to Anise after previously working at the restaurant in 2022.
A Familiar Chef Returns
Deleon brings experience from several notable restaurants, including serving as executive chef at Bullion and corporate executive sous chef for Mina Group. His background also includes time at Grant Achatz’s Chicago restaurants Next and Alinea.
Osorio is also taking part in Dallas’ broader culinary scene. On Nov. 4, he will host a Friends of James Beard Benefit Dinner at Meridian as part of Chefs for Farmers’ 2026 programming, joining several Dallas chefs for a collaborative multi-course dinner.
Together, Deleon and Osorio have developed a menu focused on familiar dishes with unexpected touches, from creative sauces to carefully selected ingredients.
“Anise is about food that makes people feel good,” Osorio said in an official statement. “Guests should recognize what they’re eating, but there should always be something — a technique, a sauce or an unexpected ingredient — that makes the dish feel distinctly Anise. We want guests to be impressed by how the food tastes, not by how complicated it is.”
Pastry Chef Brenda Perez also contributes desserts to the restaurant’s refreshed culinary program.
From Morning Coffee To Evening Cocktails
The new breakfast menu features stuffed mascarpone French toast with blueberry compote, morning mezze with green hummus and a farm egg, and Wagyu steak and eggs. Lunch brings options such as Texas citrus and burrata, a pork belly BLT and steak frites.
On weekends, Anise joins the area’s growing brunch scene with dishes including chilaquiles, eggs in purgatory and pork belly hash.
As evening arrives, the restaurant transitions into a neighborhood cocktail bar with shareable dishes such as salmon tartare tostada, harissa prawns and cavatelli pasta. The updated beverage menu includes a Texas Ranger cocktail with bourbon and roasted pineapple purée, a mezcal-based Desert Coyote and a selection of wines.
