The Short North Arts District will soon welcome a new dining experience, Canario, led by business partners Marco Piazza and chef Jeremy Nelson. The eatery will be located at 19 W. Russell St., most recently home to Woodhouse Vegan cafe.

Between the two of them, Piazza and Nelson bring a combined 40 years of experience in the restaurant industry. Piazza was a founding partner of restaurants Atlas Tavern and Nomad near Polaris; he has since left those businesses to start his own consulting firm, Cut and Dried Consulting. Canario is named after his dog, Beluga, a presa Canario breed.

Nelson has built up considerable experience over his 20-year culinary career, including stints in multiple Michelin-starred kitchens like Charlie Trotter’s in Chicago. As of late, he’s been operating the Umbral Supper Club, which has been featuring eight-course tasting menus around town. He said he draws inspiration from classic French and Japanese cuisines.

The two-level restaurant space will feature an open kitchen and bar, plus seating for 42. The kitchen will include a French-style flat-top oven. Dinner service will include a tasting menu and a la carte items, plus happy hour from 3-5 p.m. five nights a week.

“I feel like with Jeremy’s background, Canario comes with this high-end feel, but I still want to capture the neighborhood,” Piazza said in a press release. “We’d like to think Canario will be a draw for all diners. It is both intimate and sophisticated but also warm and unintimidating, perfect for those who seek a well-rounded, urban dining experience.”

An exact opening date hasn’t been announced yet, but you can follow Canario’s progress at @canarioshortnorth on Instagram.
