  1. Apprenticeships like this used to work because it was usually only one apprentice at a time and they were given room and board. This can’t work today unless the apprentice is already loaded

  2. My gosh, it would be a privilege to be in that position and learn not only how to cook but how to work with pros..

  3. I think it would depend on the circumstances. NOMA abused it, but if you’re taking someone who has little to no culinary background but they have the passion, and you actually teach them instead of just making them clean and do the most menial jobs, it’s a fair trade.
