Prawn and New potato stew

New potato with plenty of flavour,such as Jersey Royals,Maris Piper or Nicola,are essential for this effortless stew.Use a good quality jar of tomato and chilli sauce;there are now plenty available in the supermarkets.For a really easy supper dish,serve with warm,crusty bread to mop up the delicious sauce,and a mixed green salad.

Prawn and New potato stew

SERVES FOUR

INGREDIENTS:

675g/1  1/2lb small new potatos,scrubbed
15g/1/2 oz/1/2 cup fresh coriander (cilantro)
350g/12 oz jar tomato and chilli sauce
300g/110 oz cooked peeled prawns(shrimp),thawed and drained if frozen

METHOD:

1.Cook the potatos in lightly salted,boiling water for 15 minutes,until tender.Drain and return to the pan.

2.Finely chop half the coriander and add the pan with the tomato and chilli sauce and 90ml/6 tbsb water.Bring to the boil, reduce the heat,cover and simmer gently for 5 minutes.

3.Stir in the prawns and heat briefly until they are warmed through.Do not overheat the prawns or they will quickly shrivel,becoming tough and tasteless.spoon into shallow bowls and serve sprinkled with remaining coriander,torn into pieces.
