Honey and Watermelon Tonic

This refreshing juice will help to cool the body, calm the digestion and cleanse the system, and may even have aphrodisiac qualities. On hot days add ice cubes to keep the juice cool. The distinctive pinkish-red flesh of the watermelon gives this tonic a beautiful hue – decorate with a few fresh mint leaves to provide a stunning color contrast.

SERVES FOUR

INGREDIENTS

     1 watermelon
     1 litre / 1 3/4 pints / 4 cups chilled still mineral water
     2 limes (extract the juice)
     Honey to taste

METHOD

1.Cut the watermelon flesh into chunks, cutting away the skin and discarding the black seeds. Place in a large bowl, pour the chilled water over and leave to stand for 10 minutes.

2.Tip the mixture into a large sieve set over a bowl. Using a wooden spoon, press gently on the fruit to extract all the liquid.

3.Stir in the lime juice and sweeten to taste with honey. Pour into a jug (pitcher) or glasses, decorate with mint leaves and serve.
