Snowball Cookies!!



Learn how to make these amazing little snowball cookies!! Delicate cookies jam packed full of pecans and rolled in powdered sugar. A perfect addition to any Christmas cookie platter! They also make great cookies to take to a cookie swap.

What you’ll need:
1/2 cup unsalted butter, softened
3 Tbsp sugar
1 tsp vanilla extract
1/2 tsp salt
1 cup all-purpose flour
1 cup finely chopped pecans (or any other nut of your choice)
approx 1/2 cup powdered/icing/confectioners sugar

Preheat oven to 325*F. Using a stand mixer or a large bowl and hand-held mixer, cream butter and sugar together. Add in vanilla and salt. Mix well to combine. Add in flour and pecans. Mix until dough cleans the sides of the bowl. Dough will be dry and crumbly. Gently knead and roll about 2 Tbsp dough into a ball using the palms of your hands. Place onto a cookie sheet lined with either a silicone baking mat or parchment paper. Bake 18-20 minutes or until just barely light brown. Let cool for 5 minutes and toss in a large ziptop bag in powdered sugar. Shake off excess and let cool completely. Toss again in powdered sugar when cool, shake off excess and store in an airtight container. Makes 15-16 (1″) cookies. Enjoy!!
