Crunchy bean sprouts and zesty scallions make a delightful accent to any meal.
2 tbsp. vegetable oil
1 lb. fresh bean sprouts, or 1 16-oz. can bean sprouts, drained*
1 tsp. salt
4 chopped scallions
1. Heat oil in a skillet or wok.
2. Add bean sprouts. Stir-fry for 2 minutes. Add salt.
3. Stir in scallions and cook for 2 more minutes.
Preparation time: 5 minutes
Cooking time: 5 to 10 minutes
* If you use fresh bean sprouts for this recipe, be sure to choose sprouts that are firm and white. Many Chinese cooks like to trim off both ends of the sprouts, which may have a slightly bitter flavor.
