Chef Diego Galicia is one half of the duo that founded Mixtli, San Antonio’s first Michelin-starred restaurant, but the established restaurateur’s next endeavor is moving in a completely different direction from the award-winning Mexican concept. In fact, Galicia’s upcoming eatery, Filleman House, will offer a come-as-you-are experience with a menu curated to reflect the chef’s personal tastes and travels.
MySA caught up with Galicia after a news release about Filleman House went out, and he shared details about the restaurant, including that it will be located in the former Restaurant Claudine on Grayson Street. Galicia told us over the phone that the property practically fell into his lap and that the rest followed quickly.
“The menu is just a collection of things I like to eat. I love crab and oysters. I love foie gras, and I love caviar, and I love steaks. I love burgers and pasta. So it’s this whole really broad group of food,” Galicia said.
Filleman House is set in a historic home dating to 1910, and Galicia hopes to restore much of its original aesthetic while adding his own touches to the space. That includes the addition of a whole new bar, complete with a program dreamed up by Mixtli bar director Lauren Beckman, who won the Michelin Guide Texas Service Award in 2024.
Above all, Galicia said that he wants San Antonio to know that they can show up just as they are and enjoy the offerings at Filleman House.
“Filleman is for everybody. I feel like a lot of restaurants want to filter San Antonians out because of their Mexican heritage, or because they look a certain way,” Galicia said. “It’s for everyone. You want to come to the bar and have a $10 burger? You can. You want to come to the bar and get a cocktail? You can.”
