Sweet Potato Casserole!!



Learn how I make homemade sweet potato casserole! Fresh sweet potatoes cooked, slightly mashed and topped with a brown sugar pecan topping. Perfect for your next family or holiday get together! I always get rave reviews for this and know you will too.

What you’ll need:
3lbs sweet potatoes (about 3 medium to large)
1 cup brown sugar
1/4 cup butter, melted
1/4 cup milk or cream
2 large eggs, beaten
1 tsp vanilla extract

for the topping:
1/2 cup brown sugar
1/3 cup all-purpose flour
1/4 cup butter, melted
2-3 oz pecan halves

Wash and peel the sweet potatoes. Cut off the ends and discard. Cut potatoes into 1/2″ cubes and add to a large pot. Cover with water and bring to a boil. Cook 8-10 minutes until fork tender. Drain and let cool.
Slightly mash cooked sweet potatoes and add in brown sugar, butter, milk or cream, beaten eggs and vanilla and mix well. Transfer to a 1.6L (1.5qt) oven safe casserole dish.
For the topping, combine brown sugar, flour and melted butter. Sprinkle over top of sweet potato mixture. Top with pecans.
Bake in a preheated 350*F oven for 30-35 minutes or until bubbly golden brown on top. Let rest 10-15 minutes before serving. Serves 4-6. Enjoy!!
